  1. Prepare the fideo in a large skillet or pot, heat the vegetable oil over medium heat. Add the fideo pasta and cook, stirring frequently, until it turns golden brown and toasted, about 5-7 minutes. Be careful not to burn it.
  2. Pour in the chicken or vegetable broth into the pot and bring the mixture to a gentle boil, then reduce the heat to low
  3. Add the chopped onion, minced garlic, tomatoes and all of the spices to the pot. Stir and let it simmer for about 10-15 minutes to allow the flavors to meld together.
  4. Ladle the sopa de fideo into bowls, garnish with chopped fresh cilantro, and serve with avocado slices and lime wedges on the side.
